- Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper if desired.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- In a large bowl, mash the bananas. Add the shredded zucchini, eggs, brown sugar, granulated sugar, oil, and vanilla extract, then whisk until smooth and combined.
- Add the dry ingredients to the wet ingredients and stir gently just until no dry streaks remain. Fold in the chopped nuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 55 minutes, or until the loaf is golden brown and a tester inserted in the center comes out clean or with a few moist crumbs.
- Cool the bread in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Lightly squeeze the shredded zucchini to remove excess moisture, but do not dry it out completely. Do not overmix the batter. The loaf slices best after fully cooling and tastes even better the next day.
