Prepare the Pan and Batter
- Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line with parchment if desired.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, whisk the eggs, granulated sugar, brown sugar, oil, and vanilla until smooth and slightly glossy.
- Fold the shredded zucchini into the wet mixture. If the zucchini is very watery, lightly squeeze out excess moisture first.
- Add the dry ingredients to the wet ingredients and stir gently just until combined. Fold in the chopped nuts, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
Bake and Cool
- Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Lightly squeeze very wet zucchini, but do not dry it out completely. Do not overmix the batter. Optional add-ins include chopped walnuts, pecans, raisins, or chocolate chips.
