- Preheat the oven to 400°F. Lightly grease a baking dish or sheet pan large enough to hold the zucchini in a mostly even layer.
- Slice the zucchini into even 1/4-inch rounds. Pat dry lightly if the zucchini seems very wet.
- In a large bowl, toss the zucchini with the olive oil, salt, black pepper, garlic powder, and Italian seasoning until evenly coated.
- Arrange the zucchini in the prepared baking dish in a single layer or slight overlap, without piling too deeply.
- Bake for 15 minutes, until the zucchini begins to soften and release some moisture.
- Remove from the oven and sprinkle the mozzarella and Parmesan evenly over the top.
- Return to the oven and bake for 8 to 10 minutes more, until the cheese is melted and the zucchini is tender.
- Broil for 1 to 2 minutes if desired, watching closely, until the cheese develops golden-brown spots.
- Let rest for 3 to 5 minutes, garnish with chopped parsley, and serve warm.
Notes
Do not overcrowd the pan or the zucchini may steam. For best texture, serve soon after baking. Provolone, Monterey Jack, or fontina can replace the mozzarella.
