Fudgy Kid Friendly Zucchini Brownies

Ingredients
  

Dry ingredients
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
Wet ingredients
  • 1/2 cup unsalted butter melted and slightly cooled
  • 3/4 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups zucchini finely shredded and lightly patted dry
Optional add-in
  • 1/2 cup semisweet chocolate chips

Equipment

  • 1 8-inch square baking pan lined with parchment paper
  • 1 box grater for shredding zucchini
  • 2 mixing bowls one medium and one large
  • 1 whisk
  • 1 spatula

Method
 

  1. Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper.
  2. Finely grate the zucchini and gently pat it with paper towels so it is not dripping wet.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. In a large bowl, whisk the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla and whisk until thick and glossy.
  5. Fold the dry ingredients into the wet ingredients just until no dry streaks remain.
  6. Fold in the shredded zucchini until the batter becomes glossy and spreadable. Stir in the chocolate chips if using.
  7. Spread the batter evenly in the prepared pan and smooth the top.
  8. Bake for 28 to 32 minutes, until the top is set and slightly crinkly and a toothpick inserted near the center comes out with moist crumbs.
  9. Cool completely in the pan before lifting out and slicing into 12 brownies.

Notes

Do not overbake for the fudgiest texture. Pat the zucchini dry lightly but do not squeeze out all moisture. Brownies slice best after cooling completely.
