Ingredients
  

For the zucchini fritters
  • 2 medium zucchini shredded
  • 1 teaspoon salt divided
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley or dill chopped
  • 1/4 teaspoon black pepper
  • 2 to 3 tablespoons olive oil for frying
For serving
  • sour cream or plain Greek yogurt for serving
  • chopped chives or extra herbs for garnish
  • lemon wedges optional

Equipment

  • 1 box grater for shredding zucchini
  • 1 colander for draining zucchini
  • 1 mixing bowl
  • 1 large skillet nonstick or well-seasoned
  • 1 spatula for flipping fritters
  • 1 kitchen towel or paper towels for squeezing zucchini

Method
 

Prepare the zucchini
  1. Shred the zucchini using the large holes of a box grater. Place it in a colander, toss with 1/2 teaspoon of the salt, and let it sit for 10 minutes.
  2. Transfer the zucchini to a clean kitchen towel or paper towels and squeeze very well until most of the liquid is removed.
Mix the batter
  1. In a medium bowl, whisk the eggs. Add the flour, Parmesan, onion, garlic, parsley, black pepper, and remaining 1/2 teaspoon salt. Stir until combined.
  2. Add the squeezed zucchini and mix until evenly coated. The mixture should be thick enough to scoop.
Cook the fritters
  1. Heat 1 to 2 tablespoons olive oil in a large skillet over medium heat.
  2. Drop heaping spoonfuls of the mixture into the skillet and gently flatten them into small rounds.
  3. Cook for 3 to 4 minutes on the first side until golden brown and set around the edges. Flip carefully and cook for another 3 to 4 minutes.
  4. Transfer to a paper towel-lined plate or wire rack. Add more oil as needed and repeat with the remaining batter.
  5. Serve warm with sour cream or Greek yogurt, chopped chives, and lemon wedges if desired.

Notes

Squeeze the zucchini very well for the crispiest fritters. Keep the patties small so they cook evenly. If the mixture seems wet, add 1 extra tablespoon of flour. Reheat leftovers in a skillet or oven for the best texture.
