Method
- Preheat the oven to 425°F and line a baking sheet or small sheet pan with parchment paper.
- Grate the zucchini, then place it in a clean kitchen towel or paper towels and squeeze out as much liquid as possible.
- Add the squeezed zucchini to a mixing bowl with the eggs, 1 cup mozzarella, Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper. Stir until evenly combined.
- Spread the mixture onto the prepared baking sheet in an even rectangle about 1/2 inch thick.
- Bake for 15 minutes, until the mixture is set and the edges are lightly golden.
- Remove the pan from the oven and sprinkle the remaining 1/2 cup mozzarella over the top.
- Return to the oven and bake for 5 to 7 minutes more, until the cheese is melted and golden in spots.
- Cool for 5 minutes, sprinkle with parsley or dried herbs, then cut into breadstick shapes and serve warm with marinara if desired.
Notes
Squeeze the zucchini very well to avoid soggy breadsticks. If your zucchini seems extra wet, add 1 to 2 more tablespoons of breadcrumbs. Reheat leftovers in the oven or air fryer for the best texture.
