- Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon until evenly combined.
- In a large bowl, whisk the eggs, granulated sugar, brown sugar, oil, Greek yogurt, and vanilla until glossy and well blended.
- Fold the shredded zucchini into the wet ingredients.
- Add the dry ingredients to the wet ingredients and stir gently just until no dry streaks remain. Fold in the chocolate chips.
- Transfer the batter to the prepared loaf pan, smooth the top, and sprinkle with the remaining chocolate chips.
- Bake for 50 to 55 minutes, until a tester inserted in the center comes out with a few moist crumbs but no wet batter.
- Cool the bread in the pan for 15 minutes, then remove to a wire rack and cool completely before slicing.
Notes
Do not overmix the batter. Lightly squeeze very wet zucchini, but leave some moisture for a tender loaf. Tent loosely with foil near the end of baking if the top darkens too quickly. Cool completely before slicing for the best texture.
