- Preheat the oven to 375°F (190°C). Butter a 9-inch pie dish or similar baking dish and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 4 to 5 minutes until softened.
- Add the zucchini, garlic, salt, black pepper, and oregano. Cook for 8 to 10 minutes, stirring occasionally, until the zucchini is tender and excess moisture has cooked off.
- Remove the skillet from the heat and let the zucchini mixture cool for about 5 minutes.
- In a large bowl, whisk together the eggs, ricotta, 3/4 cup of the mozzarella, the Parmesan, and the milk until smooth.
- Fold the cooled zucchini mixture into the egg and cheese mixture until evenly combined.
- Pour the mixture into the prepared dish and spread evenly. Sprinkle the remaining 1/4 cup mozzarella over the top.
- Bake for 35 to 40 minutes, until the center is set and the top is golden brown.
- Let the pie rest for 10 minutes before slicing. Garnish with chopped parsley and serve warm.
Notes
Cook the zucchini long enough to remove excess moisture for the best texture. Let the pie rest before slicing so it firms up properly. Cottage cheese can replace ricotta if needed.
