Ingredients
  

For the bread
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup apple cider
  • 1/2 cup plain Greek yogurt or sour cream
For the coating
  • 2 tablespoons unsalted butter melted
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon

Equipment

  • 1 9x5-inch loaf pan lined with parchment
  • 1 mixing bowl large
  • 1 mixing bowl medium
  • 1 whisk
  • 1 hand mixer or stand mixer
  • 1 wire rack
  • 1 pastry brush for coating

Method
 

Prepare the batter
  1. Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  4. Add half of the dry ingredients to the butter mixture and mix just until mostly combined. Add the apple cider and Greek yogurt and mix gently. Add the remaining dry ingredients and stir just until no dry streaks remain.
  5. Spread the batter into the prepared loaf pan and smooth the top.
Bake and finish
  1. Bake for 50 to 55 minutes, or until the loaf is golden brown and a tester inserted in the center comes out clean or with a few moist crumbs.
  2. Cool the bread in the pan for 10 minutes, then lift it out and place it on a wire rack while still warm.
  3. In a small bowl, stir together the granulated sugar and cinnamon for the coating.
  4. Brush the warm loaf all over with melted butter.
  5. Sprinkle and gently press the cinnamon sugar over the top and sides of the loaf. Let cool slightly before slicing and serving.

Notes

For stronger apple flavor, reduce extra cider on the stovetop and cool it before measuring. Do not overmix the batter. Coat the loaf while warm so the cinnamon sugar sticks well.
